It is widely accepted that a sufficient food and water consumption is an integral part of living and health promotion. Food safety and quality are therefore considered to be a major concern for food manufacturers, policy makers and general public. Although there is a significant progress in advisory labelling practice, undeclared allergens can sometimes be added into food as a result of a manufacturing process.
